

Serves 4
1 cup red onion sliced thinly
1 lb tomatoes
1 cucumber sliced in thin rounds
6-7 basil leaves washed and dried
¼ cup yellow bell peppers sliced in thin strips
salt & pepper to taste
2 Tbsp red wine vinegar
1/3 cup Raggio di Luna Olive Oil
Soak onion slices in bowl of cold water for 10+ minutes, drain and repeat. Drain and pat dry onions. Place onions in serving bowl. Skin tomatoes, cut into ¼ inch wedges removing seeds. Add to bowl serving bowl with onion. Tear basil into small bits and add to bowl Add bell pepper and cucumber. Add Raggio di Luna Olive Oil, wine vinegar, salt and pepper. Toss and coat all ingredients. Serve immediately.
