Spicy Chicken Fiesta


12 Chicken Breasts. ( skinless and boneless )
Epicurean’s Delight Garlic Flavored Olive Oil
Mediterranean Magic
1 cup chopped peanuts
1 7 oz can chopped mild chilies ( hot if you choose )
1/4 cup parsley flakes
1/4 cup cilantro flakes
1/2 lb. shredded pepper jack cheese
Epicurean’s Delight Garlic Sprinkles to taste

In a baking dish lay out all 12 breasts and coat w/ Garlic Flavored Olive Oil ( both sides ). Sprinkle a good coat of Mediterranean Magic on one side and let stand for 30 minutes, turn over and coat other side the same way and let stand for an additional 30 minutes. Chop 1 cup peanuts and sprinkle on top of chicken breasts, sprinkle chili peppers on top of breasts and peanuts. Take 1/2 of the cheese and sprinkle over breasts. Sprinkle parsley and cilantro evenly on breasts. Sprinkle remainder of cheese on top of that and top with Garlic Sprinkles to taste.

Bake in a 350 degree oven for 30 to 45 minutes or till done. Serve on a bed of rice. (even better if served on a bed of Spanish rice). Serves 6-8
