

Serves 4-6
1 lb ripe sweet cherry tomatoes
1 10 oz ball of fresh mozzarella cheese
8-10 fresh basil leaves washed and patted dry
Salt
Pepper
5 Tbsp SilverLeaf Extra Virgin Olive Oil
2 tsp quality balsamic vinegar
( vinegar is optional, traditional mozzarella salad does not use vinegar )
Wash tomatoes and cut in half. Cut mozzarella into ½ inch pieces. Tear basil into small pieces. Place tomatoes, mozzarella and basil into large salad bowl. Add salt and toss; then add vinegar and pepper and toss again. Add SIlverLeaf Extra Virgin Olive Oil and toss thoroughly. Allow salad to rest 20 minutes but not more than 30 minutes. Serve by itself or with crusty bread.
