

Serves 6
1 pound fresh small shrimp ( It is very important to use fresh shrimp and not frozen )
½ cup fresh lemon juice
½ cup fresh orange juice
1 small garlic clove, minced
1 /4 cup SilverLeaf Sole Extra Virgin Olive Oil
Salt
Pinch of red chili flakes
¼ cup flat-leaf parsley, chopped
Peel and de-vein shrimp.
Place in glass bowl. Combine lemon juice and orange juice, and pour over shrimp. Let shrimp marinate for 30 minutes, turning once or twice.
Drain shrimp and discard marinade. Toss shrimp with garlic and Sole Extra Virgin Olive Oil. Add salt and red chili flakes to taste. Sprinkle with parsley and serve immediately. ( Refrigerate any leftovers )
