Garlic Shrimp Skewers

1 pound large shrimp, uncooked & peeled
8 oz. jar SilverLeaf Mild Mediterranean Marinated Garlic drained, reserve the juice
Rosemary sprigs
1 p int cherry tomatoes
1 eggplant, cut in 1" cubes
1 zucchini or yellow squash cut in north to south, and then cut 1" slices
1 red onion, cut in 1/2" chunks
1 cup SilverLeaf California Extra Virgin Olive Oil
1 Tbsp. Mediterranean Magic Seasoning

Mix together the garlic juice, California Extra Virgin Olive Oil, and Mediterranean Magic to create a marinade; set aside. Using the rosemary sprigs, spear garlic clove, shrimp, garlic clove, tomato, eggplant, shrimp, squash, onion, garlic clove, shrimp, garlic clove. Continue until all ingredients are used. Pour the marinade over the skewers and refrigerate 4 to 6 hours, rotating occasionally. Cook on a hot grill until done.
